How to Prepare

  • Grind your meat mixture, ensuring it contains at least 20% pork or pork fat for optimal texture and flavor.
  • Dissolve the seasoning and included cure packet in water.
  • Mix thoroughly into the ground meat until evenly distributed.
  • Form into logs and roll to remove trapped air, or stuff into soaked fibrous or non-edible collagen casings.

For Bologna Logs

  • Preheat oven to 300°F.
  • Bake for approximately 1 hour, or until the internal temperature reaches 165°F.

For Stuffed Casings

  • After stuffing, refrigerate overnight to allow the sausage to set.
  • The following day, preheat your oven or smoker to 180°F.
  • Cook or smoke until the internal temperature reaches 165°F.
  • Remove and allow to cool before serving.
